Quick and Easy Chickpea and Cucumber Salad

Serves 2 - 4
Quick and easy summer salad with chickpeas and cucumbers.
Â Salad bowl.
- 1 can (14oz) chickpeas
- 2 medium cucumbers, peeled, large dice
- 1 clove garlic, peeled
- 1 TBSP fresh lemon juice
- 2 TBSP good olive oil
- salt and pepper to taste
- 1/4 tsp paprika
Drain chickpeas, rinse, drain well.
In a salad bowl, crush the peeled garlic, add lemon juice and olive oil
Peel and dice the cucumbers. Add to salad.
Add chickpeas, toss.
Add salt, pepper, paprika, toss and taste.
Adjust seasoning and serve.
Goes well with hummous, other appetizers, or as a main course for light summer lunch.
Serve with pita/arabic bread.
